气质联用仪在食品工业中的应用

摘要:气一质联用(GC-MS)~术始于20世纪后期,广泛应用于生命科学、环保、材料、食品、药物开发
等领域,特别适用于易挥发或易衍生化合物的分析,是一种完美的现代分析方法。文章介绍了GCMS
的相关概念、组成、原理及性能,主要综述了GC-MS在食品工业中的应用,以期为GC—MS的用
途开发及探寻一些食品的检测分析作出贡献。

Abstract:Gas-chromatography-mass spectrometry(GC-M S)technology was a perfect modern ana—
lyrical methods which began in the late 20th century,and had fl widely use in life sciences,envi—
ronmental protection,materials,food,drug development and other fields,particularly applicable
tO the analysis of volatile or easily derived from compounds,.In this article,tO explore the devel—
opment and analysis for some food by using GC—MS,the related concepts,composition,theory and
peHormance of GC--MS were introduced,then the application of GC—M S in food industry was
mainly stated.
